My fave breakfast snack, lunch or dinner lately!

Blueberry Banana Protein Pancakes!

Yes all I may have mentioned this or showed the recipe before, but recently I have been eating these like they were going out of style. Yum! I have been adjusting the measurements to my taste and playing with different toppings or eating them as is! These are so multifunctional!!! And like I said you can have them as a snack, breakfast, lunch or dinner... WHENEVER! Try them! They do not disappoint! I eat them and I am not a big fan of bananas! Here's the recipe below and I will tell you the different tweaks I've made afterwards. BTW of course I learned of this recipe from my fave website (BLOGILATES.COM) DUH!

Blueberry Banana Protein Pancakes
 
Protein: Over 27g (WOWZERS!)
Calories: 250-300
Makes about 4 pancakes
Serving size (usually): 2
 
1 egg
1 scoop vanilla protein powder
1 tbs ground flax seed
1 ripened banana – mashed up!
1/2 cup fresh blueberries
1/2 tbs organic vanilla soymilk
2 strawberries

Mix! Pour into round bits of perfection. Fry with EVOO or some other form of cooking spray. Top with strawberries!

I have tried a little Cool Whip Lite, natural blueberry jam, no topping at all and I plan to try them topped with Agave Nectar. You can also try it with the recommended strawberries, bananas or some other healthy delish topping! Toppings and ingredients will make the protein and calorie values vary.

My measurements are usually more like this: 1 egg, 1 scoop vanilla protein powder, 1 tbs ground flax seed, 1/2 or 1/4 ripened banana – mashed up (because I don't want the potenct taste of the bananas), 1/2 cup fresh blueberries or natural blueberrie jam (the jam gives it a purple look... I like purple), 1/2 tbs organic vanilla soymilk and no strawberries  with one of the mentioned toppings or without any toppings and some turkey bacon (2 slices) on the side! Wallah!

Sometimes I mash and mix in a bowl with a spoon and sometimes I blend it all in a blender depends...
